Lemont Citrus Fibre:

Lemont Citrus Fibre is a dietary fibre extracted from the peel of citrus fruits. It is a healthy, clean ingredient with superb water-holding power and natural emulsifying ability, good thermal stability and acid and alkali resistance, and can replace thickeners, emulsifiers and stabilisers. It has a wide range of applications in food, including fat reduction, sugar reduction, water retention, thickening, vegetarianism, increased fibre content and ‘clean labelling’.

Sauces:

Applied to salad dressings to reduce fat, vegetarian egg replacement, achieve ‘clean label’, maintain smooth texture, firmness and finesse. Tomato sauces can be used to reduce sugar, replace the original sauce, achieve ‘clean label’, maintain product consistency and texture, improve stability and reduce water precipittion.

Baking:

Applied to bakery products can increase the content of dietary fibre, enhance the elasticity and softness of products, prolong the time of moisture retention, improve the moistness and freshness of bakery products during the shelf life, and overall present a more moist and fresh taste state.

Dairy products (low temperature yoghurt):

It can be used in low temperature yoghurt to provide a ‘clean label’ solution. Lemon Citrus Fibre can be used in low temperature yoghurt for effective thickening at low dosage levels, to optimise overall formulation costs, simplify ingredients while maintaining product consistency and finesse, improve shelf-life stability and reduce water precipitation, providing both product upgrading and cost optimisation benefits.

Meat Products:

Applied to grilled meat, fried meat, ham products can reduce the use of food additives, achieve clean labelling and improve product yield. In hamburger and sausage products, it can improve the firmness and juiciness of the meat. It can be used in vegetable-based products to improve yield, thickening and emulsifying functions, enhance meat texture, and increase juiciness.
